Game Day Cupcakes

Last weekend I made cupcakes for a fun football snack and it was the perfect excuse to break out my new Wilton frosting kit to make some Game Day Cupcakes with homemade buttercream. Making my own buttercream is so much fun and allows me to customize my cupcakes for whatever event I have going on.

First of all, not all projects come out the way you plan and that is totally ok. I wanted my cupcakes and frosting to be a dark blue to match my team’s color but no matter how much blue food coloring I added, I couldn’t get the color dark enough. Then I overcooked my batch of white cake cupcakes. That’s when you decorate the cupcakes, watch everyone eat them without hesitation, and let go of the need for perfection.

I had a blast trying different decorating tips and making homemade buttercream frosting.

Supplies:

Cupcake tins

Cupcakes (homemade or store-bought)

Football Picks

Wilton decorating kit

Food coloring

Homemade Buttercream Frosting

Ingredients:

2 cups softened unsalted butter
4 cups powdered sugar
1/4 cup heavy whipping cream
1 1/4 tsp. vanilla extract
1 tsp. salt

Directions:

Combine butter, salt, and vanilla and mix until stiff
Add powdered sugar one cup at a time – careful, it will get messy if you add it too fast
Mix well on high speed
Add whipping cream to the mixture and continue to mix until fluffy

Makes frosting for approximately 20 cupcakes.

I dyed some of the frosting blue and used my new Wilton 1M Star Tip to decorate and then added a football pick.

I will work on perfecting my food coloring skills before the Super Bowl so I can present the perfect blue team cupcakes. What color would you dye your cupcakes and frosting?
